Truth for Tuesday
I lugged the kids out the house a few weeks ago for a dreaded trip to the post office. I dislike doing the “fast errands” with both the girls, because what of what should be a 5 minute trip turns into a 45 minute nightmare. After putting both girls in my giant double stroller, I walk up to the door, to a little old man who is holding the door open for us. I can’t help but be polite and graciously thank him, apparently giving him the go to pour out his entire life story to the girls and I, as we are still standing in the doorway. He tells me about his wife Elizabeth Grace, who he was married to for 60 years before she died of a heart attack, of their life together, about their son who lives in San Diego, his time in the Navy, and back to his wife. He told me that she was the most beautiful woman in the world, and that she had jet-black curly hair. He told me to hold on a minute and he ran to his car and brought in this frame that was about 20 x 20 with 4-5 pictures of his wife and few of him and his son. We probably spent 15-20 minutes of our post office time talking or listening to this man. After I finally got my package sent out I piled the girls back in the car and headed home. I couldn’t help but think about all the years that this little old man spent in love with his wife. It makes me a little sad to think about how love after the newness fades loses its luster in our world. We only get excited about the beginnings when it’s the all the time in the middle, and the endings that really matter. The longevity of a life given to someone else is what makes it beautiful.
So Jacob served seven years to get Rachel, but they seemed like only a few days to him because of his love for her.

*Sorry this post is a little late, I finally got my hands on "The Shack" and could not get it out of my hands:)

Sweetness
2 cups (8 ounces) toasted almonds or hazelnuts, chopped between 'fine' and 'coarse'
2 tablespoons water
1/2 cup (1 stick) salted or unsalted butter, cut into pieces (use real butter)
a nice, big pinch of salt
1 cup granulated sugar
1/4 cup packed light brown sugar
1/4 teaspoon baking soda
1 teaspoon vanilla extract
5 ounces bittersweet or semisweet chocolate, chopped, or 1 cup chocolate chips
optional: Ground cocoa nibs and fleur de seln (did not know what this was, so I did not use it)
1. Lightly oil a baking sheet with an unflavored vegetable oil.
2. Sprinkle half the nuts into a rectangle about 8' x 10" on the baking sheet.
3. In a medium heavy-duty saucepan fitted with a candy thermometer, heat the water, butter, salt, and both sugars. Cook, stirring as little as possible, until the thermometer reads 300 F degrees. Have the vanilla and baking soda handy. Keep an eye on it especially after it reaches about 280 degrees. You don't want the mixture to scorch.
4. Immediately remove from heat and stir in the baking soda and vanilla.
5. Quickly pour the mixture over the nuts on the baking sheet. Try to pour the mixture so it forms a relatively even layer. (If necessary, gently but quickly spread with a spatula, but don't overwork it.)
5. Strew the chocolate pieces over the top and let stand 2 minutes, then spread in an even layer. Let it sit ( I just put in the oven overnight) for up to 24 hours, until the candy/chocolate hardens. Enjoy!
A few tips....It doesn't always work out the way you plan, candy can be quite fickle (from what I read.) Use a heavy duty sauce pan, and use a wooden spoon when you stir it. The mixture sticks too much to a metal spoon. If you don't have a candy thermometer I bought one from Walmart for like $3. Just make sure to test the accuracy of it before you use it for candy. To test, bring water to a steady boil, it should read 212 degrees. It not, note the difference and make sure to add that into your temperature for the candy.
Just for fun!

Truth for Tuesday (on Monday!)
I find it comical how politics only exists in extremes. People either “don’t want to talk about it” or want to yell, scream, and kick to get their point across. Why can we not just have a rational, normal, conversation, using indoor voices? I sent in my absentee ballot last week. I voted for McCain. I truthfully do not idolize the Republican party. I sincerely believe both parties fall extremely short of the true heart of God. I feel I have to go where my faith leads me. I end up in the same place every time. Below are my 4 “biblically based” non negotiable priorities when it comes to my vote.
1. Human Life- I will always vote for the candidate who will protect life or will do the most to protect it. In this category I include everything from abortion and war, to crime and anything else that threatens human life. I can and would never vote for abortion to be legal. I believe from conception life exists and actually the whole issue is just an issue of selfishness in my mind. If you make a decision, then the own the outcome, whether or not you like it. With that said, I am not naive enough to think that abortion is the only issue that affects human life. EVERY person on this earth is made in the image of God, which means all life “good” or “bad” should be seen with value. I think war is a horrible tragedy that undoubtedly will exist in world full of sin. Do I think all war is of God? No. And I do believe that God will hold those accountable for “holiness” done in His name, that is no where near holy. With that said, I do believe that as we see, from the beginning of time, sometimes lives will be lost, for the sake of peace. Even if we were not at war with the middle east, lives would still be lost, maybe at a much higher rate. God breathed life into us, into ALL of humanity…not just Americans, not just the unborn, or the Democrats, or Republicans, not just the educated, not just one race….All of us.
2. Less Government—I think from the Romans, to the Pharisees, to Hitler, or to Castro…too much of something, never seems to work. Constitutionally, government was never meant to be SO BIG, to impinge on our freedoms, like how we spend our own money. What ever happened to the simple life, of getting up and going to work? Seriously. When my parents got married, they had $20. That’s it, they were poor…very poor. My dad’s car did not have a floor board…like a Flintstone car. They had to push it to start it. They have worked their entire lives to get to where they are now. They now own a small business. Raising taxes puts a huge burden on their company, on my parents, but it ripples down onto the employees that depend on them to put food on their tables. Why is my parents 30+ years of extremely hard work paying for “crappy heathcare”, college tuition, and really expensive advertisements. That is also something that I don’t understand. The country is an economic crisis, a child dies every 5 minutes of starvation…and we are spending millions of dollars for campaigns. Fabulous.
3. Sanctity of Marriage/Families- I believe that marriage/family is the fundamental foundation to what makes a country work. From the beginning of Genesis God ordains the relationship between a husband and a wife. Marriage should exist between a man and a woman. I really believe that we have allowed ourselves to become so diluted that we don’t even bat an eye to the extreme mockery of God, that goes on everyday. If you want to take God out of the picture, anatomically it only works between man and woman. Without reproduction, we would be extinct.
4. Poverty- My heart bleeds for the unfortunate, for the poor, and the hungry. I remember when I was about 10, my mom, me and my sister lived in New York City for a summer. My sister and I were obsessed with giving stuff to the poor, to the people living on the streets. As a child, I felt so helpless and so grieved that someone did not have a bed to go home to. I remember once we went to McDonald's and bought like 50 cheeseburgers and handed them out to everyone we saw. I know what God’s word says about the poor. Biblically speaking, God’s word talks about the poor a whole lot more than it does about homosexuality or abortion. Most Christians would say, but yes, they are talking to the church. They are talking to the church, but a lot of us our not listening. This forces the government to step in. Then the cycle begins…what works, what doesn’t, what enables people to work, what makes them lazier…so many questions. In the end I still think both sides help and hurt the poor…
These are my truths, when it comes to my political opinions. I don’t talk politics very often, but I figure I better get my two cents in before the BIG DAY. I am pretty sure I know the outcome, but you never know. GO AND VOTE.
PS. Please do not get all defensive, eye rolling, huffy and puffy, or anything else about what I believe...seriously I do not hate you, or even dislike you if you don't believe the same thing as me...I can deal with respected differences.....
HAPPPY BIRTHDAY KAITLYN!

Number 2 and 3....
The First (of Three) Halloween's
On Wednesdy night, we went to a fall festival at one of the Methodist churches in town. They had trunk or treat, where you go to each car and get candy. Naomi went last year, so she was a pro (until she saw the big scary bear...it was not scary but lately she is terrified of any "mascot" like outfit, where you can not see a face.) It was funny. This was Gabby's first experience trick or treating and she thought is super cool that people were putting candy in her bucket.
